Microbiology Lab
We have an onsite microbiologist, Alioune "Al" Ly, who performs tests daily. All items on the daily production schedule are tested for coliform, E.coli, Aerobics, Yeast, and Mold. A Cintex metal detector is used daily on all products processed at our facility. Blue lights are used to inspect for insects and bugs. Chlorine and water temperature is monitored every 2 hours. Our microbiologist keeps a very thorough record system.
